Sunday Slow Cooker:  Chicken Cacciatore with Mushrooms

It’s been awhile since I have shared a slow cooker recipe. It’s not that I haven’t been using my slow cooker, but I have just been happily cooking some of my favorite old recipes. However this past week I was finally inspired to whip up something new when a friend requested a lighter version of Chicken Cacciatore that they could freeze for a friend with a baby on the way. This simple dish is packed with delicious Italian flavors and made special with capers and black olives. It tastes great with pasta, rice, spaghetti squash, or it’s terrific tucked in sandwiches with some melted cheese.

Chicken Cacciatore with Mushrooms
Servings: 6
Serving Size: about 1 cup

Ingredients

  • 2 lbs boneless, skinless chicken breast, cut into larger chunks
  • 1 large white onion, thinly sliced
  • 2 celery stalks with leaves, diced
  • 4 tbsp. tomato paste
  • 14 oz. fire roasted tomatoes
  • 1 lb. sliced mushrooms
  • 1 bell peppers, chopped
  • 4 garlic cloves, sliced
  • 1 tbsp. Italian seasoning
  • 1/2 cup red wine (or chicken broth)
  • 1-2 tbsp. capers, drained
  • Up to 1 tsp. red pepper flakes
  • 1 cup black olives

Instructions

  1. Add everything except the chicken and olives to the slow cooker. Stir together.
  2. Season the chicken with salt and pepper. Add to the slow cooker.
  3. Cook on low for 4-6 hours. During the last 30 minutes or cooking, add the black olives.

    So easy and so good. I did use the wine. It gave the dish a nice color and of course a great flavor. Nice there was no browning. Just chop, cut, add ingredients and turn on. Could not believe only 5 Weight Watchers points. My husband loved it and suggested serving it with some polenta. I would definitely serve to guests.

    I freeze all the ingredients in a ziplock bag (except olives). Then all I have to do is toss it in the slow cooker before I leave for work some morning. I eat it for a couple meals, then I feeze individual servings to eat later.
