Sunday Slow Cooker:  Barbecue Beer Braised Beef

Beef. Barbecue. Beer. The three little words that warm any guy’s heart. This simple recipe is sure to win over any man in your life. Make up this delicious slow cooker dish with an easy and quick homemade barbecue sauce (or use your favorite store brand), add as much heat as you like (a couple chipotle peppers would be delicious), and walk away and let the slow cooker do it’s thing. Stuffed in a sandwich, piled on some rice, or eaten right out of the slow cooker – it is sure to be a favorite.

Ingredients

  • 3 lbs. lean eye or bottom round (like Laura’s Lean Beef Eye Round)
  • 1 onion, sliced thin
  • 2 garlic cloves, minced
  • 1/2 cup ketchup
  • 1/4 cup molasses
  • 1/4 cup apple cider vinegar
  • 2 tbsp. mustard
  • 2 tbsp. brown sugar
  • 1 tbsp. paprika
  • 1/2 tsp. cumin
  • Hot sauce to taste
  • 1 cup light beer

Instructions

  1. Season the beef with salt and pepper. Add the beef to the slow cooker and top with onions and garlic.
  2. Whisk together the ketchup, molasses, vinegar, mustard, brown sugar, paprika, cumin, and hot sauce. Pout over beef.
  3. Add the beer and then cook on low for 8 hours. Shred or slice.
  4. If you desire a thicker sauce, pour the sauce into a saucepan and bring to a simmer. Reduce until thick, about 8 minutes.
