Sunday Slow Cooker:  Apple Cranberry Steel Cut Oatmeal

Sometimes I just can’t be bothered with breakfast. It’s usually the same mornings where I wish coffee could be intravenously pumped into my veins and I could stay under the covers all day. Coincidentally these are always the same days I have an unbearable amount of work or have to do something I don’t want to – like taxes or window cleaning or awkward mandatory “social” gatherings. You know the kind, where you have to go out of social or work obligation but you would rather do anything else, I mean anything. Well this is the kind of breakfast for those mornings (and any other, but especially those). The smell of cinnamon oatmeal goodness will draw you out of bed, you can eat directly from the crockpot since it feels good, and at least your belly will start the day happy. Who knows? It may even make the day seem just a bit more bearable.

Weight Watchers Apple Cranberry Steel Cut Oatmeal
Points: 5 weight watchers pointsplus
Servings: 8 servings
Serving Size: about 3/4 cup
Nutritional Info: 179.8 calories, 1.7g of fat, 39.2g of carbohydrates, 4.6g of fiber, 3.8g of protein

Ingredients

  • 1.25 cups steel cut oats
  • 3 apples, chopped
  • 2 tbsp maple syrup
  • 4 tbsp brown sugar
  • 3 cups nonfat milk
  • 1/2 cup applesauce
  • 1/3 cup dried cranberries
  • 1/2 tsp. cinnamon
  • Pinch of salt

Instructions

  1. Spray your crockpot with cooking spray or use a crockpot liner.
  2. Add everything to the crockpot and stir together.
  3. Cook on low for around 6 hours. Cooking times may vary slightly depending on your crockpot.
  4. To reheat leftovers, simply microwave with some additional milk or water.
