Summer Salad with Balsamic Glaze

Salads are one of my favorite summer meals. I like to pack them with veggies, fresh fruit, and either some leftover chicken, shrimp, steak, or quinoa. However, the real stunner in this recipe is the dressing. Ridiculously simple homemade balsamic glaze that in my humble opinion makes anything taste good. Literally you can drizzle this on anything and it miraculously tastes ten times better. So make up a bg container (or cheat and buy some at Trader Joe’s!) and make your next summer salad something really special.

Summer Salad with Balsamic Glaze
Servings: 2
Serving Size: 1/2 salad

Ingredients

  • 1/2 cup balsamic vinegar
  • 2 cups arugula
  • 2 cups baby kale or Romaine
  • 1 cup blueberries
  • 1 cup tomatoes, chopped
  • 1 cup cucumber, chopped
  • 1/2 cup bell peppers, chopped
  • 12 oz. leftover cooked chicken breast
  • Salt and pepper

Instructions

  1. Bring the balsamic vinegar to a simmer on the stove and let reduce for 15-20 minutes until it is nice and thick.
  2. Toss together all of the ingredients and drizzle on the balsamic glaze.

    This looks delicious. I’ve only had a balsamic dressing once, but it was wonderful. I do have a bottle of the Balsamic Glaze from TJ’s. I have used it with tomato, basil, and mozzarella, but didn’t know what to do with the rest of the bottle. Now I do. Thanks so much! Pinning it now.
