Have you ever eaten fresh corn? I mean, fresh raw corn. I hadn’t and boy was I missing out. I recently had my first ever fresh corn salad and it was amazing. This salad is a version of that with fresh corn, sweet cherry tomatoes, a little fresh mozzarella, and some avocado. Honestly, I think it is all I am going to want to eat this summer. Simple, fresh, and delicious. You can easily switch up the cheese and veggies to whatever you have on hand or prefer.
Weight Watchers Summer Fresh Corn Salad
Points: 3 Weight Watchers PointsPlus
Servings: 4
Serving Size: about 2/3 cup
Nutritional Info: 123.4 calories, 8.8 g of fat, 9.7 g of carbohydrates, 3.1 g of fiber 3.2 g of protein
Ingredients
1 ear of corn, cut of the cob
10 cherry tomatoes, cut in 1/2
1/2 avocado, cut into small pieces
1/2 yellow pepper
1 oz fresh mozzarella, cut into small pieces
1/2 red pepper
1 tbsp olive oil
1 tbsp balsamic vinegar
juice of 1/2 lemon
Salt and freshly ground pepper to taste
Instructions
1. Build your vinaigrette in the bottom of a medium bowl by whisking together the olive oil, lemon juice, vinegar, salt, and pepper.
2. Add all of your veggies and the cheese and mix together. Let sit for 5-10 minutes so flavors can combine. Enjoy!
