Steel Cut Baked Oatmeal

I have been eating a lot of varieties of the baked pumpkin oatmeal, with all sorts of combinations of bananas, berries, apples, and other fruit. It has definitely become a favorite for me in the morning. And for a while I have wanted to try it with steel cut oats, although I was pretty convinced it wouldn’t work. Luckily I was wrong and it came out delicious. This recipe combines bananas and cranberries but it would work with just about anything. It also definitely will keep you full all morning with all the fiber and protein.

Weight Watchers Steel Cut Baked Oatmeal
Points: 6 Weight Watchers PointsPlus
Servings: 1
Serving Size: 1 ramekin
Nutritional Info: 254.9 calories, 5.3 g of fat, 47.9 g carbohydrates, 6.8 g dietary fiber, 10.3 g of protein

Ingredients
1/3 cup steel cut oats
1/3 cup milk
1/3 cup fresh cranberries
1 whole banana, chopped
1 packet Stevia
1/4 tsp cinnamon
1/4 tsp vanilla extract
Dash of salt

Instructions
1. Preheat the oven to 400 degrees.

2. In a bowl, combine all of the ingredients. Spray a small ramekin or other oven safe dish with cooking spray. Pour in the oatmeal mixture.

3. Bake for 25 minutes. At the end of baking, place under the broiler for 2-3 minutes to crisp up the top. Enjoy!

    Sounds yummy. Are you using prepared (already cooked) oatmeal or raw? Seems the amount of liquid would not be enough if starting from raw.

      I started with raw oatmeal that I bought in the bulk bins. I like my oatmeal to have a little bite or texture to it and that seems to work in terms of liquid. I was surprised as well!

    Two questions, are the cranberries fresh? You mentioned bananas in the opening, but they are not listed in the ingredients. Thank you.

    I have also wondered whether steel cut oats would work for baked oatmeal, so I was so excited to find this recipe! And it turned out great — super easy and delicious. One point of contention, though — when I entered the recipe into the WW system, it came out as 7 points plus, even with using low-fat (1%) milk. Am I calculating incorrectly?

    Have you ever made this ahead and used it all week? does it freeze well or how long will it stay good in fridge? I don’t have time to make this in the morning before work so need an option for quick and easy. Another thing, I have always had a problem with oatmeal leaving me very hungry mid morning. Why will this not do the same any idea?
