There is a little cart near my house that opens on the weekends and the delicious smell of onions, peppers, and sausage wafts through the air, calling my name. Honestly, it’s insane how good it smells. So to keep myself from running outside and buying one, or three, I decided it was time to make my own sausage and pepper sandwich. I used my favorite spicy chicken sausage and added in poblano peppers to add some more heat. You can easily substitute for your favorite sausage.
Spicy Sausage, Onion, and Pepper Sandwich
Servings: 4 servings
Serving Size: One sandwich
Nutritional Info: 234.0 calories, 11 g of fat, 10 g of carbohydrates, 4.2 g of fiber, 19.7 g of protein * 6 P+ (may differ depending on exact sausage and bun)
Ingredients
4 low fat chicken sausages (the one’s I used are 4 points each, spicy chicken sausage)
1/2 white onion, sliced
1/2 red onion, sliced
1 green peppers, sliced
2 poblano peppers, sliced
1 clove of garlic
Salt and pepper to taste
4 light hamburger rolls
Directions
1. Saute the onions in a skillet with cooking spray for 3-5 minutes. Then add the peppers and garlic and continue to saute for 6-8 minutes until they become soft. If they begin to burn, add a little water or chicken broth. Season with salt and pepper to taste.
2. Remove the casing (optional, I prefer it without) from the sausage and slice into rings. Add to the peppers and onions and cook about 5 minutes for the flavors to combine and for the sausages to heat through. Serve with a light calorie roll or on your favorite bread (adjust points/nutritional info if using different bread)
