Vegetables usually only make one appearance at Superbowl parties and spreads – as cold and uninviting crudite fighting for attention next to sliders, chili, wings, and more. So why not make vegetables a star this year by whipping up these simple, crunchy green bean fries? Serve them with your favorite dipping sauce, I usually grab for this skinny ranch, and watch as a green vegetable steals the show.
Servings: 8 servings
Serving Size: 1/2 cup (1/8 recipe)
Nutritional Info: 64.7 calories, .7g of fat, 10.9g of carbohydrates, 1.1g of fiber, 3.3g of protein * 2 P+
Ingredients
- 1 lb. green beans, washed and trimmed
- 1 cup bread crumbs
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1 tsp red pepper flakes
- 2 egg whites
Instructions
- Preheat the oven to 400 degrees and line a baking sheet with parchment paper.
- Stir together the bread crumbs, salt, pepper, garlic powder, and red pepper flakes. Place in a shallow bowl or plate.
- Whisk together the egg whites until frothy.
- Dip the green beans into the egg white and then roll in the bread crumbs. Place on the parchment paper in a single layer. Repeat until all the green beans are coated in bread crumbs.
- Bake for 15-20 minutes until green beans are nice and crispy, shaking the baking sheet once during cooking. Serve with skinny ranch.
