Spaghetti Squash Pizza Crust

Sometimes all a girl wants is pizza, but sometimes that same girl is doing their very best to eat healthy and low carb since it seems much to early to give up on the New Year’s resolution already. So what to do? Make this amazing spaghetti squash pizza crust and then cover it in delicious toppings. It’s crispy, delicious, and adds a great flavor to any pizza recipe. I made two this weekend and used the second one as a sandwich wrap. Pretty delicious as well.

One more quick thing – I usually eat a nice big portion of this when I make it which is why there are only 4 servings listed, but you could easily get up to 8 pieces from the recipe. You can also make a great cauliflower version too!

Spaghetti Squash Pizza Crust
Servings: 4
Serving Size: 1/4 recipe

Ingredients

  • 3 cups cooked spaghetti squash (about 1 medium squash)
  • 1 egg, beaten
  • 1 cloves of garlic, minced
  • 1/4 cup basil, diced
  • 1/2 cup part skim mozzarella cheese
  • 2 tbsp. Parmesan cheese
  • Salt and pepper

Instructions

  1. Preheat the oven to 400 degrees.
  2. Squeeze out as much excess moisture as possible from the spaghetti squash. The more moisture that you remove the crispier the crust will be.
  3. Mix the egg, garlic, basil, mozzarella, Parmesan, salt, and pepper into the squash to form the crust. Then press flat onto a baking sheet lined with parchment paper.
  4. Bake for 15-20 minutes until crust sets and begins to get crispy on the edges.

    Do you cook the crust first and THEN add your toppings?

    Do you cook the squash first, scoop out and then bake?

      Yes – cook the squash and scrape it out. After that you make the crust.

    Kristen, this is sheer genius! One of my fave, fave dinner recipes is a spaghetti squash with Italian sausage sauce, so I can absolutely imagine how fantastic this will be! I’m so genuinely excited about your concept! Can’t wait to try it! Pinning just as fast as my little fingers can … :D
