Since I was a kid I have always loved peanut butter cookies, but I usually stay away from them because they are undoubtedly high in calories. However, when I saw this simple peanut butter cookie recipe on Chocolate Covered Katie the other day I had to give them a shot, and they came out delicious. They are vegan, can be made in minutes, and are delicious. I used chunky peanut butter since that was what I had on hand and want to try them again with almond butter. A perfect, peanut buttery treat.
Healthy Peanut Butter Cookies
Servings: 14-18
Serving Size: 1 cookie
Nutritional Info: 50.7 calories, 3.2 g of fat, 4.6 g carbohydrates, .6 g dietary fiber, 1.6 g of protein * 2 P+
Ingredients
1/2 cup peanut butter, or another nut butter
3/4 tsp baking soda
3 tbsp whole-wheat flour
1/4 cup sugar
2 tbsp brown sugar
2 tbsp applesauce
1/2 tsp vanilla extract
Instructions
1. Preheat oven to 350 degrees.
2. Mix together the dry ingredients well. Then add the wet ingredients and mix together.
3. Place parchment paper onto a large baking sheet. Drop dough onto the baking sheet making around 14 cookies. If you want your cookies soft, refrigerate the dough for 1 hour before baking.
4. Bake for 8-10 minutes and let cool for 5 minutes, if you can wait that long.

14-18 cookies from half a cup of peanut butter and 3 tbsp flour??
I know – it didn’t seem possible to me either but it somehow happens. Each cookie ends up being about 1.5-2 inches across or so once they bake.

Hi there – first a big thank you for all the recipes here. I just re-joined WW and am trying to learn the point system. I entered the values of this recipe in – per serving – and my calculator says 1 point for each cookie. Do I have that right? Or am I missing something. Thanks!!

Can PB2 be substituted for ‘regular’ peanut butter?
I don’t see why not. I have never tried making them with PB2 but I think it would work. If you try it let me know how they turn out!
Just made these as a holiday treat and used almond butter. Was able to get 16 cookies out of the batch. Might be a new cookie tradition! So easy!!
