Simple Garlic Butter Shellfish

Over long holiday weekends I almost always crave New England lobsters and steamers, which is what I would be eating if I were back at home with my family in New Hampshire. So this Memorial Day weekend knowing I wouldn’t be able to find traditional New England steamers (they don’t exist in LA as far as I have looked) and lobster would be crazy expensive, I decided to make some simple and quick shellfish steamed in garlic, butter, and white wine. Not exactly a New England clambake, but close enough that I could get my hands dirty cracking into some delicious seafood, spend time around a table with good friends, and say thank you to all the wonderful service people who we honor on Memorial Day.

Simple Garlic Butter Shellfish
Servings: 4 servings
Serving Size: 1/4 recipe (1/2 lb. shellfish)

Ingredients

  • 1 cup white wine
  • 1.5 tbsp. butter
  • 1 onion, minced
  • 3 garlic cloves, minced
  • 3 garlic cloves, whole
  • 1 tsp. dried thyme (1 tbsp. fresh)
  • 2 lbs. shellfish (I used 1 lb. mussels and 1 lb. shrimp)
  • Salt and pepper to taste

Instructions

  1. In a Dutch oven (or pan with a cover large enough to fit the shellfish), add the butter, onion, garlic, and thyme over medium heat. Cook for about 5 minutes or until fragrant.
  2. Add the white wine, shellfish, salt, and pepper.
  3. Stir and cover the pot. Let cook for 6-8 minutes until the shellfish have opened up and/or are cooked through. Most shellfish take about the same time to cook. If cooking in the shells, discard any unopened shellfish.
