Seven Layer Greek Dip

I have been eating feta dip on just about everything this past week – spread on sandwiches and wraps, melted over a delicious Greek turkey burger, scooped up with lots of veggies, and finally in this delicious seven layer Greek dip, dreamed up by the same creator of the feta dip, How Sweet Eats. (On a side note, I am completely obsessed with her blog at the moment. Talk about inspiration.) This delicious dip combines lots of traditional Greek flavors all in one dish, but is packed with veggies, yogurt, and good for you hummus that keeps it surprisingly healthy and light at only 3 points plus for 1/2 cup.

Servings: 12
Serving Size: about 1/2 of a cup

Ingredients

  • 1 1/3 cup 0% Greek yogurt
  • 3 tablespoons fresh dill
  • 1 garlic clove, minced
  • juice of 1/2 lemon
  • Salt and pepper to taste
  • 1 15-ounce can of kalamata olives, drained and chopped (about 1 cup)
  • 1 1/2 cups hummus of your choice
  • 1 15-ounce can of artichoke hearts (packed in water), drained and chopped (about 1 cup)
  • 1 cup of crazy feta (1/2 recipe) or 2 oz feta
  • 1 large tomato, chopped
  • 1/2 English cucumber, chopped

Instructions

  1. Mix together the Greek yogurt, dill, lemon juice, and garlic in a small bowl. Add salt and pepper to taste and then spread on the bottom of your serving dish. I used an 8 X 8 glass dish.
  2. Sprinkle the olives over the yogurt and then smooth the hummus over the olives. It will be easier to spread if it is closer to room temperature.
  3. Layer on the artichoke hearts and then sprinkle on the crazy feta dip or plain feta.
  4. Sprinkle on the cucumbers and tomatoes and serve with homemade baked pita chips and veggies. Red peppers, cut into small scoops, are delicious with this dip.

    Just made this–minus the artichokes as I’m not crazy about them. It’s blending some in the fridge–can’t wait to give it a go! Thanks for the recipe.
