Savory Red Pepper Feta Muffins

I am always looking for an on the go snack that is tasty and satisfying.  There is a bakery near my house that makes delicious savory muffins with cheese and vegetables, that they call pizza muffins, that are delicious although I am quite certain would derail my diet.  I decided to try and adapt a traditional muffin recipe to make my own savory muffins and came up with these savory red pepper feta muffins.  This is a recipe I think I will definitely come back to and switch up the herbs, vegetables, and cheese to play around with the flavors.

Healthy Savory Red Pepper Feta Muffins
Servings: 12
Serving Size: 1 muffin * 2 P+

Ingredients

2/3 cup whole wheat  flour
2 tsp baking powder
2/3 cup white flour
2/3 cup reduced fat feta cheese
1 small to medium onion, finely chopped
1 clove garlic, finely chopped
1 red pepper, finely chopped
1 tsp dried oregano
2 tsp tomato paste
2/3 cup skim milk
2 tsp sugar
1 tsp salt
1 tsp freshly ground black pepper
1 egg

Instructions

  1. Preheat the oven to 4oo degrees and spray a muffin tin with cooking spray.
  2. Spray a medium sauce pan with cooking spray and saute the onions, garlic, and red pepper until soft.  Remove from the heat and place in a small bowl to let cool.
  3. Combine the flour, baking powder, salt, sugar, pepper, and oregano and stir together to remove clumps.
  4. Beat your egg well and mix together with milk, tomato paste, pepper and onion mixture, and feta cheese.
  5. Mix together the dry flour mixture with the wet egg mixture until just mixed.
  6. Pour into muffin tin and cook for 14-16 minutes until golden brown on the top.
  7. Let cool for 15 minutes and remove from muffin tin.  These are great warm or on the go at room temperature

    I’m about to make these this afternoon- anyone know if they would freeze well? I’ve never frozen muffins, and I live by myself. I would assume so but- wanted to see if anyone has any advice!

    I made these last night! they made the house smell so good! ive been looking for yummy 2 point recipes, and these were great. mine didnt rise very well – pretty much stayed the same size as the batter. wonder what i did wrong. but they tasted great and were very moist.
