Roasted Garlic Pepperoni Parmesan Meatballs

With the weather getting cold, I am more than happy to bring back warm and cozy dinners. Recently I was planning on just making spaghetti and meatballs, but decided on a whim to throw in some roasted garlic and pepperoni and magic happened. The roasted garlic adds deep rich flavor and the pepperoni adds some spice and smokiness. If you don’t have time for roasting the garlic, just add three cloves of minced garlic instead. I recommend serving it up over pasta, spaghetti squash, or stuffed in a light roll for a sandwich. It sorts of like a pepperoni pizza meatball. Yum.

Pepperoni Parmesan Meatballs
Servings: 4 servings

  • 1 garlic bulb
  • 1 egg
  • 1 egg white
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp oregano
  • 1/4 tsp red pepper flakes
  • 1 tbsp. tomato paste
  • 1/4 cup onion, minced
  • 1/4 cup parsley, minced
  • 2 garlic cloves, minced
  • 1/4 cup Parmesan cheese
  • 1/4 cup diced pepperoni (1 oz.)
  • 1 lb. 95% lean ground beef


  1. Preheat the oven to 400 degrees.
  2. Cut the top off of the garlic and spray with cooking spray. Wrap in foil and bake for 30-45 minutes until tender. Roasting time depends on the size of the garlic.
  3. Remove the garlic and let it cool. Turn the oven down to 350 degrees.
  4. Whisk together the egg and egg white in a bowl. Squeeze in the roasted garlic and mix.
  5. In a bowl mix together all of the ingredients gently until just combined. Do not overmix.
  6. Roll out your meatballs to about 1 inch in diameter. You should get around 12.
  7. Lay them flat on a baking sheet. Bake for 20-25 minutes until cooked through.
  8. Serve with your favorite marinara sauce.

    That sounds fabulous! I have some turkey pepperoni that needs to be used.
