Roasted Delicata Squash with Butter and Miso

Lately I have testing out some new Thanksgiving side recipes and wanted to do something different than traditional roasted squash. After trying some roasted vegetables with miso in a restaurant recently, I decided to try some at home with squash. The recipe is incredible simple – just squash tossed with melted miso and butter, but the results are delicious. Rich in flavor and low in calories. They taste great with a squeeze of lime or lemon on top. I still haven’t decided yet if I will make these for Thanksgiving, but I will definitely be making it as a side dish.

Roasted Delicata Squash with Butter and Miso
Servings: 4

Ingredients

  • 1 delicata squash, seeded and cut into slices
  • 1.5 tbsp. light butter
  • 1.5 tbsp. white miso

Instructions

  1. Preheat the oven to 400 degrees.
  2. Melt the butter and miso together. Stir until smooth.
  3. Toss the squash with the miso butter.
  4. Lay out flat on the baking sheet, without having them overlap.
  5. Roast for 15 minutes. Flip and roast for 10 more minutes.

    I have discovered delicate squash this year and absolutely love it. It’s hard to find, though. I live in Nashville, TN, and found it at Trader Joe’s. It didn’t last long and I haven’t been able to find it anyplace else. Lucky you that you can buy it.
    My question is about miso. I believe it has something to do with soy but am not sure what it is. Does it have a strong flavor?
    Note to Donna – It’s oblong, like a zucchini, and has green and yellow stripes. Don’t peel it as the skin softens when roasted. It’s delicious!
