Roast Jalapeno Cilantro and Garlic Chicken Breasts

Roasting chicken never really gets old for me – the house smells amazing, the flavor combinations are endless, the crispy skin (yum!), and the fact that I can use it all week make me a huge fan of this simple meal. Normally I choose to flavor my chicken with lemon and herbs, but last week I wanted something a little spicy and decided to stuff some cilantro, jalapeno, and garlic compound butter under the skins. The result was a delicious and easy roasted chicken that is full of flavor. Adjust the amount of garlic and jalapeno you use to fit your own personal tastes and make up a big batch so you have plenty of chicken leftover.

  • 4 bone-in, skin on chicken breasts
  • 2 tbsp. butter
  • 1-2 jalapeno, seeded and minced
  • 1/4 cup cilantro, minced
  • 1-2 garlic cloves, minced
  • Salt and pepper
  • Optional: 2 lemons or limes for serving


  1. Preheat the oven to 450 degrees. Line a broiler or baking pan with foil for easy clean up. Place a wire rack on top of the pan.
  2. Using your hands or a food processor, combined the butter, jalapeno, cilantro, garlic, salt, and pepper.
  3. Season the chicken all over with salt and pepper.
  4. Carefully pull the skin away from the chicken breasts and stuff the jalapeno cilantro butter instead, dividing it evenly between each breast.
  5. Bake for 30-35 minutes or until juice run clear (internal temp of 160) If needed broil for 2 minutes after to crisp up the skin. Let rest for 5 minutes. Serve with fresh lemon/lime juice squeezed on top.
