Recipe

Egg mugs have become one of my favorite quick breakfasts since there are virtually endless combinations of what you can put in them and what you can do with them after. From any combination of vegetables and cheese (like today's simple veggie and goat cheese egg mug) to crazy concoctions using leftover proteins, whole grains, and all kind of additions. Then they can be smashed between bread, wrapped up as burritos, eaten alongside fresh fruit or avocado. The possibilities are endless.

I liked that this recipe lends itself to adding in my personal flavor. I used chopped onion and zucchini and splashed it with garlic pepper hot sauce before cooking it in microwave to flavor the veg itself. Can't wait to experiment more with this one!
