Tortilla soup has always been one of my favorite soups. I love the deep rich tomato flavor, spice, and of course all the toppings. Who doesn't like loading up their soup with crunchy tortillas strips, cheese, cilantro, lime juice, and maybe some avocado or sour cream? Today's soup is inspired by a tortilla soup but also a traditional pozole with the addition of the hominy. Hominy is a bit like corn but with a meatier texture. You could use corn instead if you can't find the hominy. It's perfect for a cold day.

Ingredients

  • 2 tsp. olive oil
  • 1 U onion, diced
  • 2 U cloves garlic, minced
  • 2 tsp. paprika
  • 1 tsp. cumin
  • 3/4 tsp. coriander
  • 3/4 tsp. chili powder
  • 1/8 teaspoon cayenne pepper
  • 14 oz. crushed tomatoes
  • 4 cups vegetable broth
  • 14 oz. canned hominy, rinsed and drained
  • 14 oz. canned black beans, rinsed and drained
  • 2 U corn tortillas
  • 2 U radishes, sliced into super thin rounds
  • 2 oz queso fresco
  • 1/4 cup cilantro
  • 2 U limes

Directions

  1. Preheat the oven to 400 degrees.
  2. Heat the olive oil over medium high heat. Add the onion and cook for 4-5 minutes. Add the garlic and cook for 30 seconds. Add the spices and cook for 30 seconds.
  3. Add the crushed tomatoes and broth. Stir together. If you like a smoother soup, you may want to use an immersion blender at this point to blend the tomatoes and broth.
  4. Add the hominy and black beans. Simmer for 20 minutes.
  5. Cut the tortillas into small strips. Spray with cooking spray and place on a baking sheet or foil. Bake for 6-8 minutes until crispy.
  6. Top soup with crunchy tortillas strips, cheese, cilantro, radishes, and lime juice.

    This soup was so filling and flavorful! And it didn't take all day to make it! The hominy was a brilliant, authentic touch that was perfect in this soup. Definitely making this one again! 5 stars
