This vegetarian sandwich is surprisingly delicious. The first time I saw the recipe I was intrigued but didn't really believe that a sandwich of spinach and mushrooms could taste nearly as great as a reuben. And while I wouldn't necessarily call this a traditional reuben, it is a really delicious meatless twist on the classic dish.

Ingredients

  • 4 tbsp light mayonnaise
  • 4 tsp ketchup
  • 4 tsp chopped capers
  • 2 tsp relish
  • 3 tsp olive oil, divided
  • 1 U red onion, thinly sliced
  • 2 cups mushrooms, sliced (I like baby bella)
  • 10 cups spinach
  • Salt and pepper
  • 8 U slices reduced calorie wheat bread (or rye bread)
  • 1 cup shredded reduced fat Swiss cheese
  • 1 cup sauerkraut

Directions

  1. Mix together the mayonnaise, ketchup, capers, and relish to create the Russian dressing.
  2. Add the olive oil to the pan and add the onions and mushrooms. Cook for 4-5 minutes until tender. Add the spinach and cook until wilted. Season with salt and pepper. Remove from the pan and set aside. Wipe with paper towel.
  3. Spray with cooking spray and add half of the rye bread. Top with half of the cheese, dividing evenly among each sandwich. Place the spinach mixture on top, dividing evenly and then the sauerkraut. Finally add the remaining cheese and top with bread.
  4. Cook until browned and cheese melts. Then carefully flip and cook on the other side.
  5. Serve with Russian dressing.
