Couscous, vegetables, and a homemade cheddar cheese sauce - yum. I wish I still had leftovers. The original inspiration for this recipe actually came from trying to make a vegetarian of a cheese steak and by a happy accident this is where I ended up. Some whole wheat couscous, veggies, and the cheese sauce, oh, the cheese sauce.

Ingredients

  • 1 cup couscous
  • 2 tsp. olive oil
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 U green pepper, sliced
  • 1 U red pepper, sliced
  • 8 oz. mushrooms
  • 8 oz. broccoli florets
  • 1 U sweet onion, sliced
  • 1/2 tbsp. butter
  • 1/2 tbsp. flour
  • 3/4 cup reduced fat shredded cheddar cheese
  • 2/3 cup skim milk

Directions

  1. Cook the couscous according to package directions.
  2. Heat a skillet over medium heat with olive oil. Add peppers, onions, and mushrooms and cook for 6-8 minutes. Add the broccoli along with 2 tbsp. water. Cook for 3-4 minutes until tender crisp.
  3. Add the butter to a small saucepan. Once melted, whisk in the flour and cook for 2 minutes until lightly browned.
  4. Add the milk and bring to a simmer. Once bubbling and thickened, reduce the heat to low and stir in the cheese.
  5. Create the bowls by placing couscous on the bottom, topping with vegetable mixture, and then topping with cheese sauce.

    This recipe was good the first night but I wasn't a fan of the cheddar cheese sauce reheated. Really tasty veggie combo!
