Quiche cupcakes are one of my all time favorite recipes to make. I love the convenience of being able to take them to go and make them with whatever I happened to have at home. While normally I make these with ham, spinach, and mozzarella, this time I decided to go with another of my favorite combos - turkey, broccoli, and cheddar. I think they are delicious hot or cold and they make a perfect portable breakfast, lunch, or snack.

If you were planning on using these for a quick breakfast or more substantial meal, consider using a 6 cup muffin tin to create larger servings.
