Breakfast wraps are one of the things you will find most often in my fridge and freezer. When I know I will have a busy morning, I love having these ready to go to pop in the microwave or toaster oven for a quick and healthy breakfast or lunch. They are both cheaper and healthier than a take out version. This wrap uses spinach, tomatoes, and salty goat cheese for a yummy combination.

Make-ahead: One serving is for breakfast this morning. The remaining serving is for breakfast during the week.
Tip: Don’t like the idea of storing the cooked eggs all week? You could also add the egg whites, veggies, and cheese to a mug sprayed with cooking spray and microwave for 2 minutes in the morning. Add to wrap and enjoy.
Want more protein? Consider adding some deli meat, ground turkey, or chicken sausage. Just make sure to adjust the points.
