I prepare some type of egg mug almost every week. Usually it's for breakfast, sometimes it's to wrap up in a sandwich for and a quick lunch or dinner, and sometimes it's as a protein packed post workout snack. The basic combination for any egg mug is eggs, veggies, spices, and cheese. Then you just microwave it for about 1.5 minutes and you have easy, portable cooked eggs.

  • 1 U egg
  • 2 U egg whites
  • 1/2 cup diced tomato
  • 1 tbsp basil
  • 1 tbsp Parmesan cheese
  • salt and pepper

  1. Spray a mug with cooking spray.
  2. Whisk together the eggs and egg whites. Stir in the diced tomato, basil, Parmesan cheese, salt, and pepper.
  3. Microwave for 2-3 minutes until cooked through.

    I really liked this one. I even liked the tomatoes (which I despise)! I cut the basil in half and it was perfect for me.
