1. I had a new Cuisinart with a dicing attachment.
2. I had lots of zucchini, eggplant, and potatoes from the Farmers' Market.
3. I made a veggie and potato hash.
4. I had a lot left over.
5. I had a container of tofu which I needed to use.
And the rest is history!!

Ingredients

  • 3 U zucchini (summer squash)
  • 3 U eggplants
  • 3 U medium potatoes (purple are really good for this)
  • 1 U onion
  • 3 U garlic cloves
  • 2 U tomatoes
  • 14 oz. extra firm tofu
  • 1 tbsp olive oil
  • 1/8 cup chicken broth (more as needed)

Directions

  1. Dice all the squash, eggplant, and potatoes and set aside.
  2. Chop the onions and garlic and set aside.
  3. Chop the tomatoes and set aside.
  4. After draining and pressing the tofu, dice it and set aside.
  5. Heat the 1/2 the olive oil in a large non-stick pan. Add the tofu and sauté, over medium heat, stirring frequently, for about 10 minutes. Flip the pieces from time to time so that all sides brown equally.
  6. Meanwhile, in another pan, heat the remaining 1/2 of the olive oil and add the onion and garlic. After about 5 minutes, when the onion has started softening, add the diced squash, eggplant, and potatoes. Stir and cover the pan. Cook until the vegetables -- particularly the potatoes cubes -- are softened. Should take about 20 minutes. If you need more moisture, add a little bit of the chicken broth.
  7. When the vegetables are almost done, add the tomato cubes and stir. Cook for about 5 to 10 minutes.
  8. Finally, stir the golden tofu into the pan with the vegetables and combine well. Add your seasonings. Cover so that everything heats through. About 10 minutes. Serve and enjoy!!
