I am always on the lookout for great sweet potato recipes since they not only taste delicious but are full of carotenoids, vitamin C, potassium, and fiber, all which are great for your health. I stole this mashed sweet potato recipe from a friend after having it on Christmas Eve. It was easily the most popular side dish served. Most mashed sweet potato recipes I come across have a lot of butter and brown sugar, but this one is a little more savory and adds in creamy goat cheese, fresh chives, and parsley. I also think this recipe would be great with butter nut squash, and then it would only be 1 point per serving haven’t tried it yet, but let us know if you do!

You can easily double or triple this recipe and freeze the leftovers. When you are ready to eat, defrost and warm up in the microwave or a small pot.
