Sorry (but not sorry) about all the taco recipes lately. I just can’t help myself since it is all I want to eat in the summer time. A few tacos, grilled corn, and a fresh salad and I couldn’t be happier. This taco recipe is a combination of two of my favorites Chicken Tinga and a simple fire roasted tomato chicken dish. I love to add the chiptoles for some smokey heat. Just add enough to suit your palate. You can always use more adobo sauce on the taco itself after cooking if you need to please lots of different spice preferences. Served in some toasted corn tortillas with a sprinkling of cheese and you have an easy, affordable, and delicious meal.
