Beef. Barbecue. Beer. The three little words that warm any guy’s heart. This simple recipe is sure to win over any man in your life. Make up this delicious slow cooker dish with an easy and quick homemade barbecue sauce (or use your favorite store brand), add as much heat as you like (a couple chipotle peppers would be delicious), and walk away and let the slow cooker do it’s thing. Stuffed in a sandwich, piled on some rice, or eaten right out of the slow cooker it is sure to be a favorite.

Ingredients

  • 3 lb extra lean top round roast
  • 1 U onion, sliced thin
  • 2 U garlic cloves, minced
  • 1/2 cup ketchup
  • 1/4 cup molasses
  • 1/4 cup apple cider vinegar
  • 2 tbsp mustard
  • 2 tbsp brown sugar
  • 1 tbsp paprika
  • 1/2 tsp cumin
  • 1 cup light beer

Directions

  1. Season the beef with salt and pepper. Add the beef to the slow cooker and top with onions and garlic.
  2. Whisk together the ketchup, molasses, vinegar, mustard, brown sugar, paprika, and cumin. Add some hot sauce to taste if you like spice. Pour over beef.
  3. Add the beer and then cook on low for 8 hours. Shred or slice.
  4. If you desire a thicker sauce, pour the sauce into a saucepan and bring to a simmer. Reduce until thick, about 8 minutes.
