One strategy that really helps me stay on track is prepping my breakfasts for the week on the weekend. That way I know I have good, healthy choices that I can grab and prepare in just a few minutes. This recipe is one I reach for often. The sandwich holds up surprisingly well in the fridge and you can either panini it the day of or ahead of time and just reheat it in the microwave.

Ingredients

  • 3 U eggs
  • 3 U egg whites
  • 1/2 cup red bell pepper, diced (or any veggies)
  • 3 cups fresh spinach
  • 3 U light English muffins
  • 9 tbsp. shredded part skim mozzarella cheese
  • salt and pepper

Directions

  1. Preheat the oven to 350 degrees. Spray a muffin tin with cooking spray. 5. 6. 7.
  2. Microwave or sauté the spinach until wilted. It should take about 2 minutes in the microwave.
  3. Whisk together the eggs, egg whites, spinach, and red pepper. Season with salt and pepper. Divide evenly among 3 muffin holes.
  4. Cook for 10-15 minutes until the egg is cooked through.
  5. Layer each muffin with 3 tbsp. of cheese and egg mixture. Top with other muffin half.
  6. Press the sandwiches using a Panini press, grill (like a George Foreman), or skillet. You could also skip this step and lightly toast the muffins.
