Tomato cream sauce is dreamy and although it isn't something I would normally indulge it with pasta, I have no problem serving it with spaghetti squash. It's all about balance. This version couldn't be simpler and adding the chicken sausage makes it a complete meal. Vegetarians could use chickpeas instead to add protein.

  • 2 U spaghetti squash
  • 2 tsp. olive oil
  • 1 U onion, minced
  • 4 U garlic cloves, minced
  • 4 U chicken sausages
  • 20 oz. canned tomato sauce
  • 2/3 cup half and half
  • 1/3 cup basil

Directions

  1. Roast or microwave spaghetti squash until tender and scrape it out. To microwave, pierce all over with a fork/knife and microwave on high for 10-15 minutes until tender to the touch. To roast, cut in half and scoop out seeds. Spray with cooking spray and roast for 45-60 minutes at 375 degrees until tender.
  2. Meanwhile, heat the olive oil over medium heat. Add the onion and garlic and cook for 5-8 minutes. Add the sausages (I left them whole) and cook for 3-5 more minutes until browned on the outside.
  3. Add the tomato sauce and let simmer for 20 minutes.
  4. When ready to serve. Turn off the heat and stir in the cream and basil. Season with salt and pepper.
  5. Serve over spaghetti squash.
