Ingredients

  • 1 U spaghetti squash (cooked and shredded, place “spaghetti” in large bowl)
  • 1 lb. 93% lean ground beef (or chicken or turkey)
  • 1 U onion, chopped
  • 3 U cloves garlic, minced
  • 8 oz. canned diced green chilies ( or 1 large can, 7 oz.)
  • 14 oz. black olives (canned, drained)
  • 2 tbsp. chili powder
  • 1 tsp salt
  • 1 tbsp. cumin
  • 2 tbsp. tomato paste
  • 2 cups shredded cheddar cheese
  • 1/4 cup jalapenos, chopped (optional)

Directions

  1. In a small bowl mix: 5 eggs ½ cup milk Preheat oven to 350
  2. Cook ground meat, onion & garlic until done. Add green chilies, tomato paste, chili powder, salt and cumin. Add olives and remove from heat. Add to bowl with spaghetti squash – stir. Add egg/milk mixture and fold/mix in well.
  3. Spray with Pam a 9” x 13” baking dish and add spaghetti squash tamale pie mixture. Top with shredded cheese. Bake at 350º for 35 to 40 minutes.
