Have y'all ever had soyrizo before? Although some brands can be a bit higher in calories and fat than I normally like, it's pretty magical stuff in my opinion especially when you compare it to traditional meat chorizo and adds a ton of flavor. Usually I like to use in tacos and eggs, it's delicious in scrambled eggs, so it was the perfect addition to hash. This has doesn't have too many veggies but you could easily pack in more. Summer squash, zucchini, carrots, spinach, or kale would all be delicious and the soyrizo has enough spices and flavor for all of it.

Ingredients

  • 1 tbsp. olive oil
  • 16 oz. frozen shredded hashbrown potatoes
  • 1 U onion, diced
  • 1 U green pepper, diced
  • 1 U red pepper, diced
  • 1 tsp. paprika
  • Salt and pepper
  • 8 oz. soyrizo
  • 4 U eggs

Directions

  1. Heat the olive oil in a medium skillet over medium high heat.
  2. Add the potatoes, onion, pepper, paprika, salt, and pepper. Let cook without stirring for 3-5 minutes until everything begins to brown and get crispy.
  3. Add the soyrizo and stir. Let cook again, undisturbed 2-3 minutes until everything gets browned. Continue cooking for 3-5 minutes until everything is cooked to your liking.
  4. Set aside and cover.
  5. Spray the pan with cooking spray and cook eggs to your liking. Serve over the hash.
