I love the flavors of Moroccan food - cumin, coriander, cinnamon, and usually lots of hearty grains like lentils and chickpeas. This twist on a traditional lentil soup brings together those flavors with kale and cauliflower. Then it is finished with some lemon juice and fresh cilantro to add brightness. If you like heat, this is delicious with some chopped jalapenos or red pepper flakes added to the soup at the beginning.

Ingredients

  • 1 U onion, chopped
  • 2 U carrots, chopped
  • 2 U celery ribs, chopped
  • 4 U cloves garlic, minced
  • 2 tsp. olive oil
  • 2 tsp. cumin
  • 2 tsp. paprika
  • 1 tsp. coriander
  • 1 tsp. turmeric
  • 1/2 tsp. cinnamon
  • 6 cups vegetable broth
  • 3 cups chopped cauliflower
  • 1.5 cups red lentils
  • 20 oz. cannned diced tomatoes
  • 2 tbsp. tomato paste
  • 4 cups kale
  • 1/2 cup cilantro
  • 2 tbsp. lemon juice

Directions

  1. Add everything to the slow cooker except the cilantro and lemon juice. Cook on low for 8 hours. When ready to serve, stir in the cilantro and lemon juice.
