I didn't like beans until I was about 20 and moved to Los Angeles. It started by my friends imploring me to try refried beans. They said it was a must even though my Massachusetts upbringing told me otherwise. I finally gave in - and wow. I had been missing out or perhaps I just hadn't been to the right places. The story continued and slowly but surely I started adding more beans to my diet and truly starting to love them. Simple. affordable, packed with good-for-you fiber, and a perfect meatless meal. This version celebrates the classic Italian white bean recipes but is made in the slow cooker. Feel free to amp up the herbs in this recipe to your tastes. I don't like the beans to be overpowered but lots of folks like more herbs than the recipe calls for.

  • 28 oz diced tomatoes with Italian seasoning
  • 1 U onion, chopped
  • 6 U garlic cloves
  • 1/4 cup parsley
  • Salt and pepper
  • 1.75 cups dry white beans, rinsed
  • 3 cups vegetable broth, boiling
  • 1 tbsp balsamic vinegar
  • 1 tbsp Italian seasoning
  • Salt and pepper
