This Slow Cooker Creole Chicken and Okra Stew is full of traditional flavors without all the extra fat and calories. Plus it is Low Carb, Paleo, and Whole30 friendly.

The flavors of a traditional Creole Chicken Stew packed with spice, lots of okra, and tender, fall of the bone chicken can't be beat. And lucky for us there is an easy way to make a lightened up version in the slow cooker that is just as delicious with all the calories, fat, and hours at the stove. The key to making sure the stew is full of flavor is using lots of herbs and spices to pack tons of flavor into the broth.

Ingredients

  • 8 U chicken drumsticks, skin removed
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground pepper
  • 2 tsp olive oil
  • 4 U cloves garlic, finely chopped
  • 1 U large onion, sliced stem to root
  • 2 U stalks celery, sliced
  • 2 U bell peppers, sliced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 28 oz canned fire roasted diced tomatoes
  • 16 oz frozen sliced okra
  • 2 tbsp red wine vinegar
  • 1/4 cup chopped parsley (flat leaf)
  • 1/4 cup sliced scallions

Directions

  1. Heat 2 teaspoons oil over medium-high heat in a large heavy skillet or dutch oven. Season chicken with salt and pepper, then sear on all sides until browned. Move chicken to slow cooker.
  2. Add garlic, onion, celery, bell pepper, paprika, thyme, oregano, tomatoes to slow cooker. Top with frozen okra.
  3. Cover and cook on high 4-6 hours, until chicken and okra are tender. Once finished, stir in red wine vinegar and season with salt and pepper to taste. Top each serving with parsley and scallions.
