It comes to no surprise to any long term readers that the slow cooker is one of my favorite things of all time. Seriously. I use it all the time and it's makes meal time on a busy easy and delicious. This simple recipes combines lean pork tenderloin, balsamic vinegar, and some simple spices for a meal that is sure to please a crowd. Since this recipe is a lower carb version of the Brown Sugar Pork Tenderloin, the portion size is a bit larger than normal.

Ingredients

  • 3 lbs lean pork tenderloin
  • 1/4 cup balsamic vinegar
  • 1/2 cup low sodium chicken broth
  • 2.5 tbsp soy sauce
  • 3 tsp Stevia (or more to taste)
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp chili powder (or more to taste)
  • salt and pepper

Directions

  1. Combine the vinegar, chicken broth, and soy sauce.
  2. Combine the Stevia, cumin, garlic powder, chili powder if using, salt, and pepper. Be careful with the salt since the soy sauce is salty. You can always add more after cooking.
  3. Rub the pork with the spice mixture and place in the slow cooker. Pour vinegar mixture over top.
  4. Cook on low for 6-8 hours until very tender.
  5. If desired, reduce the cooking liquid to create your own glaze.
  6. For a crisp exterior, place under a hot broiler for 4-5 minutes.

    This was very good. We enjoyed it with some roasted carrots and asparagus. Next week we will try the Balsamic Brown Sugar Pork Tenderloin to add a bit more flavor.
