Is it wrong to dream up imaginary errands just for an excuse to eat a delicious gyro from the stand down the street? ….because that’s what I do all too much … we must need paper towels, and oh, how about a gyro? With that, I knew there must be a better way and begin testing at home gyro recipes. I tried recipes with beef, lamb, turkey, and chicken (all of which were delicious) but perhaps my favorite was the chicken version based of one of Alton Brown’s recipes. Serve it up in a warm pita with some skinny tzatziki delicious.

  • 1 lb 95 % lean ground chicken
  • 1/4 cup onion
  • 1/2 tbsp marjoram
  • 1/2 tbsp ground rosemary
  • 2 U garlic cloves
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Directions

  1. Preheat oven to 325 degrees.
  2. In a food processor, pulse together the onion and garlic until they form a paste. Remove from the food processor and press into a paper towel or cheesecloth to remove excess water.
  3. Combine the ground chicken, marjoram, rosemary, onion and garlic mixture, salt, and pepper in a large bowl.
  4. Form into a small meatloaf and bake on a sheet pan for 50-60 minutes until cooked through. Slice very thinly and enjoy!
