Since I was a kid I have always loved peanut butter cookies, but I usually stay away from them because they are undoubtedly high in calories. However, when I saw this simple peanut butter cookie recipe on Chocolate Covered Katie the other day I had to give them a shot, and they came out delicious. They are vegan, can be made in minutes, and are delicious. I used chunky peanut butter since that was what I had on hand and want to try them again with almond butter. A perfect, peanut buttery treat.

Ingredients

  • 1/2 cup reduced fat peanut butter, or another nut butter
  • 3/4 tsp baking soda
  • 3 tbsp whole-wheat flour
  • 1/4 cup sugar
  • 2 tbsp brown sugar
  • 2 tbsp unsweetened applesauce
  • 1/2 tsp vanilla extract

Directions

  1. Preheat oven to 350 degrees.
  2. Mix together the dry ingredients well. Then add the wet ingredients and mix together.
  3. Place parchment paper onto a large baking sheet. Drop dough onto the baking sheet making around 14 cookies. If you want your cookies soft, refrigerate the dough for 1 hour before baking.
  4. Bake for 8-10 minutes and let cool for 5 minutes, if you can wait that long.
