Since I was a kid I have always loved peanut butter cookies, but I usually stay away from them because they are undoubtedly high in calories. However, when I saw this simple peanut butter cookie recipe on Chocolate Covered Katie the other day I had to give them a shot, and they came out delicious. They are vegan, can be made in minutes, and are delicious. I used chunky peanut butter since that was what I had on hand and want to try them again with almond butter. A perfect, peanut buttery treat.
