Kabobs are one of my favorite things to make when I am looking for a quick and light meal. Usually I like to pair lots of veggies with a lean protein and broil them or cook them on the grill depending on the time of year. Usually I use a dry rub or store bough marinade to flavor everything up. My favorite version of this meal is today's sausage and shrimp kabobs. I love that combination and like to add Cajun seasoning since shrimp and sausage always make me think of Louisiana.

Ingredients

  • 4 U low fat chicken sausages (Whole30® approved if needed)
  • 1 lb raw shrimp
  • 1 U zucchini, cut into rounds
  • 1 U summer squash
  • 1 U red onion, chopped
  • 1.5 cups cherry tomatoes
  • 1 tbsp olive oil
  • 2 tbsp paprika
  • 1/2 tbsp garlic powder
  • 1/2 tbsp onion powder
  • 1 tbsp dried oregano
  • 1 tbsp dried thyme
  • 1/2 tbsp chili powder

Directions

  1. Mix together the paprika, garlic powder, onion powder, oregano, thyme, and chili powder if using.
  2. Toss the sausage, shrimp, zucchini, cherry tomatoes, and onion with olive oil. Then toss with spice mixture.
  3. Thread onto skewers.
  4. To grill, place on a medium hot grill (or grill pan) and cook for 4-5 minutes per side. To broil, place on a baking sheet and cook for 4 minutes per side.
