I absolutely love refried beans and they make a great side dish since they are packed with fiber to keep you full. The problem? Many times restaurant versions are packed with fat, at home versions can take hours to cook, and canned versions just don't measure up. This quick, short cut recipe can help though. Instead of using premade canned refried beans, we are going to doctor up some regular canned beans and make them taste almost as good as the real thing.

Ingredients

  • 1/2 tbsp olive oil
  • 1/2 cup onion, diced
  • 2 U garlic cloves, minced
  • 14 1/2 oz canned black beans, drained and rinsed
  • 1/2 cup low sodium chicken broth (or vegetable)
  • 1/2 tsp oregano
  • 1/4 tsp chili powder

Directions

  1. Heat the olive oil over medium heat in a skillet.
  2. Add the onion and garlic. Cook for 4-5 minutes until onion begins to soften.
  3. Add the beans, broth, oregano, and chile powder. Cook for about 5 minutes until beans are warm.
  4. Turn off the heat and season with salt and pepper. Mash the beans using a spoon.
