Sauteed Kale and Garlic and Bacon is a healthy, flavor packed side dish that has so much flavor and is Paleo, Low Carb, and Whole30 friendly.

This easy side dish of bacony, garlicky kale couldn't be more delicious. The kale is sauteed is the bacon fat and tons of garlic. It couldn't really get any better. This recipes works great for all types of greens. Try it out with spinach, collard greens, or Swiss chard. It's also tasty with asparagus, broccoli, or zucchini.

  • 2 U slices center cut thick sliced bacon, chopped
  • 1 tsp olive oil
  • 4 U cloves garlic, sliced
  • 1 U bunch kale, stripped from ribs and coarsely chopped

Directions

  1. In a large cold nonstick skillet, scatter sliced bacon. Turn on heat to medium high and cook until bacon has rendered its fat and begins to crisp, 5-7 minutes.
  2. Add garlic to skillet and cook for one minute. If skillet does not contain enough bacon fat to saute garlic and greens, add additional teaspoon of olive oil.
  3. Add kale to skillet and stir. Cook for 3-4 minutes, until kale is wilted. Season to taste with salt and pepper.
