With the weather getting cold, I am more than happy to bring back warm and cozy dinners. Recently I was planning on just making spaghetti and meatballs, but decided on a whim to throw in some roasted garlic and pepperoni and magic happened. The roasted garlic adds deep rich flavor and the pepperoni adds some spice and smokiness. If you don’t have time for roasting the garlic, just add three cloves of minced garlic instead. I recommend serving it up over pasta, spaghetti squash, or stuffed in a light roll for a sandwich. It sorts of like a pepperoni pizza meatball. Yum.
