I never knew just how much I loved cabbage until I decided to try to eat more lower carbohydrate meals and needed to embrace some new veggies. Before that my only real experience with cabbage was mushy cabbage on St. Patrick's Day that was paired with corned beef. So when I recently had roasted cabbage in a restaurant, I was blown away. Roasting brings out a delicious nutty flavor and elevates the cabbage to a whole new place. While it's delicious roasted with just olive oil, salt, and pepper, I like to incorporate some extra flavor with mustard and garlic. It's a great and hearty side dish.

  • 1 U green cabbage, cut into 8 wedges
  • 1 tbsp. olive oil
  • 1 tbsp. Dijon mustard
  • 1 U garlic clove, minced
  • salt and pepper

Directions

  1. Preheat the oven to 400 degrees.
  2. Place the cabbage on a lined or prepared baking sheet.
  3. Stir together the olive oil, mustard, and garlic. Brush onto the cabbage wedges. Season with salt and pepper.
  4. Roast for 35-45 minutes until tender. For a faster cooking time, make 12-16 wedges instead of 8.
