Oatmeal is one of my favorite morning treats and in the fall I almost always reach for this pumpkin pie version. Baking it in the oven give sit a great texture, almost like a cake or bar, and it is warm and hearty enough to keep you full all morning.

Ingredients

  • 1/2 cup old fashioned oatmeal
  • 1/4 cup nonfat milk
  • 1/4 cup pumpkin puree
  • 1 tbsp brown sugar
  • 1 tsp semi-sweet chocolate chips
  • 1/4 tsp pumpkin pie spice
  • 1/4 tsp vanilla extract
  • 1/16 tsp. salt

Directions

  1. Preheat the oven to 400 degrees.
  2. In a bowl, combine all of the ingredients. Spray a small ramekin or other 
oven safe dish with cooking spray. Pour in the oatmeal mixture.
  3. Bake for 20 minutes. At the end of baking, place under the broiler for 2-3 
minutes to crisp up the top. Enjoy!
