Pancakes are one of my favorite things to enjoy for breakfast but often I am hungry an hour later since most pancakes don't offer much in terms of protein. Luckily these banana oatmeal pancakes are packed with protein from two secret ingredients - cottage cheese and egg whites. Don't worry if you don't like cottage cheese, you won't even be able to tell it's in there. The bananas add all the sweetness you need and they taste great topped with nut butter, fresh fruit, maple syrup, or a drizzle of chocolate syrup.

  • 2 cup oats
  • 2 U bananas
  • 1 cup reduced fat cottage cheese
  • 8 U egg whites
  • 1/3 cup unsweetened almond milk
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder

Directions

  1. Add everything to a blender and blend until smooth.
  2. Spray a skillet/griddle over medium high heat with cooking spray. Add the batter and cook until bubbles begin to burst and edges firm up. Flip and cook for 2-3 minutes. Repeat until all pancakes are cooked.

    These are fantastic! Word of warning, when the recipe is scaled for leftovers you may want to prepare the batter in batches. Or maybe grind up the oats before adding the other ingredients. I put everything in my Vitamix at once as the recipe indicated, and my Vitamix overheated from the strain. All was fine once it cooled off (phew!), but I was worried I'd made $500 pancakes.
