Pickled onions are one of my favorite ways to amp up regular tacos, salads, or Mexican flavoed dishes. They add tremendous flavor and can really make any dish extra special.

  • 1 U red onion, cut into slices
  • 1/2 cup lime juice
  • 1 tsp salt

Directions

  1. To make the pickled red onions, simply combine the onions, lime juice, and salt in a small non reactive bowl or Tupperware. Cover and place in the fridge at least 4 hours before serving, I usually make mine whenever I place the chicken in to marinate.
