Everywhere I turn lately I am seeing paprika lime. There was paprika lime popcorn at my farmer's market, paprika lime corn on a restaurant menu, and paprika lime fish at a friend's dinner party. It's everywhere and for good reason since the smoky, sweet paprika pairs so well with the tangy lime juice. While I usually make paprika lime chicken, this time I decided to try it our with lean pork chops instead. A girl can only eat so much chicken. And I absolutely loved the result. The lime juice keeps the pork nice and tender and the spices add tons of flavor. You can even kick it up a notch with some extra chili powder, add some sweetness with brown sugar, or add some dried herbs to make it your perfect dish.

Ingredients

  • 1.33 lb. boneless, lean pork chops
  • 2 U garlic cloves, crushed
  • 1 tsp. paprika
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1/4 tsp. coriander
  • 1/8 tsp. allspice (optional)
  • 1 U lime, juice
  • Salt and pepper

Directions

  1. Place the pork in a shallow dish. Mix together the spices and sprinkle over the pork. Squeeze lime juice over top and let marinate for 20 minutes.
  2. Preheat your broiler (or grill). Place pork on foil lined baking sheet sprayed with cooking spray. Broil for 4-5 minutes per side or until cooked through.
