Last month when I was in Mexico City, I discovered this delicious filling that sometimes is found in tacos, squished into a quesadilla, or eaten on its own as a side dish. I immediately fell in love with it. There really isn’t much not too like potatoes, cheese, and a little spice. I have been meaning to recreate it since I got back and finally got around to it this week. It’s affordable, it’s easy, and it really is delicious. If you have time let it sit overnight so the flavors can combine even more.

Ingredients

  • 2 lbs. potatoes, peeled and chopped
  • 1 tsp vegetable oil
  • 1 U onion, sliced thin
  • 4 U poblano peppers, sliced thin
  • 1/2 cup queso fresco (or goat cheese)
  • Salt and pepper to taste

Directions

  1. Bring a large pot of salted water to a boil. Add the potatoes and cook until they are just fork tender about 15 minutes. Then drain.
  2. While the potatoes are cooking, add the poblano peppers and onion to a saute pan. Cook for about 10 minutes until the peppers and onions begin to soften.
  3. Add the potatoes to the onions and peppers and cook for an additional 10 minutes to combine the flavors. Stir in the queso fresco or goat cheese. Taste and season with salt and pepper.
  4. Serve with warm corn tortillas or as a spicy take on mashed potatoes as a side dish.
