I love a good quick breakfast and have been known to make quite a few variations on the classic microwave egg mug. But it’s easy to get sick of the same combinations eggs, veggies, cheese, repeat. So a few days back when I found myself sick of virtually all my go-to combinations and simultaneously seriously craving huevos rancheros, I came up with these. A simple 2 minute dish, made all in the microwave. Top it with some avocado, add some beans or veggies, mix things up.

Ingredients

  • 1 U egg
  • 2 U egg whites
  • 2 tbsp enchilada sauce
  • 2 tbsp part skim shredded mozzarella cheese
  • Salt and pepper
  • 1 U corn tortilla

Directions

  1. Whisk together the egg, egg whites, and enchilada sauce.
  2. Place the tortilla in a bowl and pour egg on top.
  3. Season with salt and pepper. Top with cheese.
  4. Microwave on high for 2-2.5 minutes until egg puffs up and is cooked through.

Notes

Use a low carb tortilla for low carb diets. It can also be made without a tortilla.

    Really like this recipe - love the enchilada flavor! It does take quite a bit more time for my microwave to fully cook the egg. And next time I'm going to add some veg to the mix but super tasty!
