This hearty Microwave Blueberry Banana Oat Cake is ready in under five minutes, portable, and packed with ingredients you can feel good about.

This recipe! If you have just five minutes, you have time to make a healthy, tasty, portable oat cake that you can grab as you are running out the door. It's packed with blueberries, bananas, and oatmeal with just a touch of brown sugar, so it's a breakfast you can feel good about. To be honest, the first time I saw this recipe I didn't really believe it would taste good or work. I couldn't imagine that the bananas and blueberries would provide enough moisture for the oats. But low and behold, it came out delicious and is quickly become one of my go-to breakfasts on busy mornings. I usually smear some almond butter on top and eat it as driving to work.

Ingredients

  • 1 U banana
  • 1/2 cup oats
  • 1 tsp. chia seeds
  • 1 tbsp. brown sugar
  • 1 tsp. cinnamon
  • 1/2 cup blueberries (fresh or frozen)

Directions

  1. Spray a bowl with cooking spray. Mash the banana in the bottom. Stir in the oats, chia seeds, brown sugar, and cinnamon. The gently fold in the blueberries.
  2. Microwave for 2.5-3 minutes. It's down when it looks firm and there are some small holes on the top, kind of like before you flip a pancake. Let rest 2-3 minutes before eating so it can continue to firm up.
