These spicy Mexican Green Beans are simmered in diced tomatoes and green chilies for a low calorie side dish for taco night.

I always struggle to figure out what side dishes to serve with my favorite Mexican dishes. While rice and beans are the natural go-to, it ends up being too much most of the time, especially if we are having tortillas. Salad is always an option, but it can get a little boring. So when I heard about this recipe for Mexican Green Beans, I couldn't wait to try it. The green beans are cooked with onion and garlic and then simmered in canned diced tomatoes with green chilies. Everything is finished with some fresh lime juice and cilantro. They are delicious, easy, and a great alternative for taco night.

  • 1 tbsp olive oil
  • 1 lb green beans, trimmed
  • 1 U red onion, sliced thin
  • 2 U garlic cloves, minced
  • 10 oz. canned diced tomatoes with green chilies
  • 2 tbsp. cilantro
  • 1/2 U lime, juice only

Directions

  1. Heat the olive oil over medium high heat. Add the green beans and onions. Cook for 4-5 minutes. Add the garlic and cook for 1 minute.
  2. Add the tomatoes and simmer for 10 minutes or until green beans are cooked to your liking. Turn off heat and stir in the cilantro and lime juice. Season with salt and pepper.
